Cucumber Pico De Gallo
- 1 Red Onion, chopped
- 1 Cucumber, chopped
- Cilantro, chopped
- 1 Lime, juiced
- 2 Tomatoes, chopped
- Dash of Salt
- 1tsp Whole Red Pepper (Jalapenos would have been my first choice)
Mix, shake, combine, etc, etc.
So what do you do with this cucumber goodness?
Middle-Eastern Style Chickpea Wrap
- 1 Can of Chickpeas
- Ranch Dressing
- Parmasean Cheese or Monterey Jack
- Curry powder
- Toast a tortilla.
- Microwave the chickpeas sans can for 2 minutes.
- Put on the tortilla the warm chickpeas, then the pico. Cover with a bit of dressing and cheese and curry powder.
- Wrap and enjoy!
Note: I made pork and beef burgers with onions and curry in them to wrap in this manner, but substituting the meat with the chickpeas was mucho better.
